Chai tea and pear tea cake



A few post ago I made the chai tea concentrate with spices to flavor the tea, and as I said at that time, I like spices. And to be redundant, now come with chai tea cake.

The idea came thanks to the pears 
leftover from the cinnamon Baba. Ideas go, ideas come, the tea is added to the pears and then came the spices ... Ready! Have a chai tea cake with pears in syrup.

I´m not going to lie, was delicious! As tea cake was spectacular, and for dessert, with ice cream on top? Chocolate ice cream? Awesome!




It is a very moist cake, by the addition of milk, butter, sugar and pears. 
The spices and tea, the scent, they will invade the house. And the fun part is the crunchy sugar coating from above (yes, that seems fun to me!).


As I used lots of exclamation points in this post, (Or, not!) so, next is the recipe:


Chai tea and pears tea cake

Pastry flour 250 g
Baking powder 1/2 tsp
Baking soda 1/2 tsp
Pinch salt
Butter 60 g
Common sugar 150 g
Egg 1
Milk 120 ml (1/2 cup)
Tea bag 1
Pears 250 g
Spices to taste (1 tsp cinnamon, 1/4 tsp cardamom, 1/2 tsp ground ginger, 1/4 ground cloves)
Common sugar, 1-2 tbsp for dusting

- Preheat oven to 180°C. Grease and flour a tea cake mold

- Cut the pears into 1 cm cubes
- Mix flour, powder, baking soda and salt
- Mix soft butter with sugar, and add the egg and mix again
- Heat the milk, break the tea bag, add the leaves, along with spices and let it sit for a few minutes
- Add the dry ingredients to the butter mix, and alternate with milk, until all is incorporated and you get a homogeneous mixture
- Add the pears, mix and put into the mold
- Sprinkle sugar above
- Bake for 35 minutes, or until a toothpick inserted comes out clean
- Remove and let cool before removing from pan


 

Footnotes

- Pears in syrup can be changed for natural, but ones that are rather mature. If they are too hard should be boiled until tender
- I used tea leaves from a tea bag, so that the leaves are absolutely tiny. You can put larger leaves in the mix, or strain the infused milk, so that only they have left the aroma.


 

After so many spices and tea, I will try to vary, even slightly. A little bit. Some.
